A small team with a quiet idea about weeknight food

Anklebiokne began in a flat above a coffee shop in London, with a whiteboard full of recipes nobody had time to make. We rewrote the whole thing.

Our story

Started by people who burned a lot of weeknight dinners.

Our founder, Rosalind Pembroke, spent fifteen years working unpredictable hours in publishing. She noticed that the same six excuses kept arriving at 7pm: too tired, nothing in the fridge, too many ingredients, too many decisions, no time to shop, no time to prep.

So we built a system around those six excuses — not around the latest food trend. The result is a calm, repeatable framework that fits the way busy weeks actually unfold.

What we stand for

Four small principles behind every plan

Seasonal first

We default to produce that’s in season in the UK — cheaper, tastier, kinder.

Low waste

Plans are designed so the last meal uses what the first one left behind.

No noise

No fads, no superlatives. Just clear, honest instructions.

Real lives

Plans built around school runs, late meetings and last-minute changes.

The team

A small, hands-on group

We’re six people in total, working from a studio kitchen in the City of London.

“I write our weekly plans. My favourite trick is making one pot do the work of three.”

R Rosalind Pembroke, Founder

“I handle the shopping lists. The goal is one bag, one shop, no surprises.”

M Maeve Lockhart, Operations

“I test every plan in my own home before it ships. If my kids eat it, it ships.”
